Welcome to the forums. I can understand your situation at the time when you were not able to make your payments as you were getting your paychecks very late. Are you now getting your paychecks on time? If that so, then consolidating your debts will be a better idea as all your debts will get consolidated into one loan amount. The monthly payment will be very much affordable to you with lower interest rates. You can request your creditors that from now onwards you will be making regular payments and hence, there won't be any need of taking the matter to the court.
I am sure that if your creditor gets this assurance from your side, they will give you a positive response.

It is very unfortunate that you are receiving court hearings from your creditor for which you are not liable. You should approach your creditors and explain to them the whole situation. Please try to convince them that, due to late disbursement of paychecks from your employer, you missed some of your payments and you are willing to settle it as fast as you can. Please explain them the whole situation. If they do not agree please contact a consultant who will help you to get enrollment in a debt management plan and let them handle the case. And lastly appoint an attorney who will clearly explain the whole situation to the judge and can bring the judgement in your favor.
